Summary:
Flavonoid glycosides, xanthorhamnins B, C, and rutin have
been acylated by the catalytic action of the protease
subtilisin in anhydrous pyridine. The acylation occurred
with high yield with rutin giving a single monoester on
its glucose moiety showing excellent selectivity. But
it occurred with low yield on the galactose moiety of
the two flavonoid triglycosides.
